Our soup star in autumn Bright yellow zucchini and carrot soup: easy to conjure up
This soup is not only beautiful, it is also particularly easy to prepare and tastes really good. Try it!
Ingredients for 4 servings:
2 zucchini, yellow
500ml vegetable stock
And here’s how it’s done:
First, carefully wash the courgettes and carrots and peel the potatoes. Then cut everything into cubes. Peel and chop the onion.
Heat the oil in a pan and sauté the onion. Add the vegetables, sauté briefly then deglaze with the broth. Let everything simmer for about 15 minutes until the vegetables are tender.
Blend the soup and bring to a boil again. Then add the cream. Season with salt and pepper then serve.
