Our Low Calorie Hearty Lentil Soup Recipe
Lose weight with lentil soup? It is possible – if you pay attention to a low-calorie preparation and the right ingredients. Read here how it works.
And that’s how it’s done
- It is best to cover the dried lentils and soak them in about 700ml of water overnight. Then bring the soaking water and 400 ml of vegetable stock to the boil in a large pot. Salt and pepper, add the bay leaves. Let simmer for 40 minutes.
- Meanwhile, peel the onions, carrots and celery, then cut them into small cubes. Wash the leek and cut it into thin rings. Heat the oil in a large skillet and sauté the vegetables. Peel the garlic and press it with a press to the other vegetables. Let it cook for ten minutes.
- Now deglaze the vegetables with a little broth. Simmer for another five minutes. Add the contents of the pan to the lentils in the pan and stir.
- Remove the bay leaves and season the soup with mustard, sugar, thyme and balsamic vinegar. Then it can be served.
Point: Do you need a meat side dish? Then cut yourself Wiener sausages into the soup. It contains a few more calories, but the whole thing is much more filling. Just right for hungry eaters.
Such a hearty soup is perfect when it’s colder outside. It is better if the soup is also low in calories, because: Christmas and the Advent season will be rich and filling enough – you don’t need extra pounds in the fall.
